Chicken Continental
4 boneless skinless chicken breasts
1/2 cup FRYIN’ MAGIC
olive oil
1 can (10-1/2 ounces) condensed cream-of-chicken soup
2-1/2 tablespoons grated onion
1 teaspoon salt
dash of pepper
1 tablespoon chopped parsley
1/2 teaspoon celery flakes
1/8 teaspoons thyme
1-1/3 cups water
1-1/3 cups Minute Rice
Preheat oven to 375°F.
1. Roll chicken in FRYIN’ MAGIC; brown in olive oil. Remove chicken.
2. Stir soup, seasonings, and water into drippings. Cook and stir to a boil.
3. Spread Minute Rice in 1-3/4 quart shallow casserole dish.
4. Pour all but 1/3 cup soup mixture over rice; stir to moisten. Top with chicken and rest of soup mixture.
5. Bake, covered for 30 minutes or until tender.
YIELD: 4 servings
