Baked Yam Balls
1 can (40 ounces) yams, drained and mashed
½ cup packed brown sugar
6 tablespoons FRYIN’ MAGIC, divided
2 tablespoons butter or margarine
½ teaspoon grated lemon peel
½ cup chopped walnut
12 large marshmallows
¾ cup crushed corn flakes
1. Mix yams, brown sugar, 1 tablespoon FRYIN’ MAGIC, butter, grated peel, and walnuts. Cover each marshmallow with about ¼ cup mixture, shaping into a ball.
2. Roll balls in remaining 5 tablespoons FRYIN’ MAGIC to coat, and then roll in crushed corn flakes.
3. Put into a buttered 2-quart baking dish.
4. Bake at 350°F 15 minutes, or until thoroughly heated.
