Pork Patties with Cherry Sauce
1 egg
1 tablespoon water
3/4 cup Fryin' Magic
6 pork tenderloin patties (about 1 pound), pounded to an even thickness
3 tablespoons butter
1 jar (12 ounces) cherry preserves
2 tablespoons lime juice
2 teaspoons cornstarch
2 tablespoons lime juice
2 teaspoons cornstarch
1. Beat egg with water on a plate. Put Fryin' Magic on a separate plate.
2. Coat pork patties with egg, and then with a double coating of Fryin' Magic.
3. Melt butter in a large skillet. Add coated patties and cook about 7-1/2 minutes or until tender, turning as necessary to brown evenly.
4. Combine preserves, lime juice, and cornstarch in a saucepan. Bring to a boil over medium heat, stirring constantly, and boil 2 minutes. Serve sauce over pork patties.
