Corn Bake
3 cans (12 ounces each) whole-kernel golden corn with sweet peppers, drained
1 small can (2/3 cup) evaporated milk
1 cup shredded Swiss cheese
2 eggs, beaten
2 tablespoons chopped onion
4 tablespoons Fryin' Magic, divided
1 cup finely crushed round buttery crackers
1. Combine corn, evaporated milk, cheese, eggs, onion, and 2 tablespoons Fryin' Magic. Pour into a 2-quart baking dish.
2. Mix remaining 2 tablespoons Fryin' Magic with cracker crumbs. Spoon over corn mixture.
3. Bake at 350°F 25 to 30 minutes, or until crumbs are lightly browned. Cut into pieces to serve.
