Meat-Wrapped Eggs with Cheese Sauce
Meat-Wrapped Eggs:
1 pound ground beef
3/4 cup Fryin' Magic, divided
1 egg, slightly beaten
1/4 cup chopped parsley
1/4 cup all-purpose flour
1/4 cup milk
6 peeled, hard-cooked eggs
oil for deep frying
Sauce:
3 tablespoons butter
3 tablespoons flour
1/4 teaspoon salt
1-1/2 cups milk
3/4 cup shredded cheddar cheese
1 tablespoon lemon juice
1. For meat-wrapped eggs, mix beef into 1/4 cup Fryin' Magic, beaten egg, and parsley; divide into six portions.
2. Put remaining 1/2 cup Fryin' Magic, the flour, and milk into separate bowls.
3. Coat each hard-cooked egg with Fryin' Magic. Flatten each portion of beef mixture into a thin patty and shape around each egg. Coat each ball with flour, milk, and a double coating of Fryin' Magic.
4. Heat oil to 365°F in a deep fryer or saucepan.
5. Fry coated eggs, a layer at a time, in heated oil 5 minutes or until brown, turning as necessary to brown evenly. Drain on paper towels.
6. For sauce, heat butter in a saucepan. Blend in flour and salt; heat until bubbly. Add milk gradually, stirring until smooth. Bring to boil, stirring constantly, and boil for 1 minute. Add cheese and stir until melted. Remove from heat and stir in lemon juice.
7. Serve sauce hot and over meat-wrapped eggs.
