Chocolate Rum Balls
1 package (6 ounces) semi-sweet chocolate pieces, melted
3 tablespoons corn syrup
2 teaspoons instant coffee
2 tablespoons hot water
3 cups sifted confectioners sugar
1 cup (about 22) vanilla wafer crumbs
1/4 cup Fryin' Magic
1 cup chopped walnuts
1/3 cup rum
Confectioners sugar (about 1/4 cup)
1. Blend melted chocolate and corn syrup in small bowl.
2. Dissolve instant coffee in hot water and add to chocolate in bowl. Beat on low speed, adding 3 cups confectioners sugar, the wafer crumbs, and Fryin' Magic. Mix in walnuts and rum.
3. Shape into 1-1/4 inch balls, put into an airtight container, and allow to ripen overnight.
4. Roll in confectioners sugar before serving.
YIELD: about 3 dozen
